Mini Quiches

Hello!
On the menu today is mini quiches!
To make 12 mini quiches you will need:

  • A drop of vegetable oil (for frying)
  • 1 onion (finely diced)
  • Chopped courgette, tomatoes, bacon or mushrooms (your choice)
  • 6 eggs (beaten)
  • 1 cup of single cream.
  • 1 cup of any hard cheese (i used cheddar)
  • Salt and pepper
  • 1kg (six rolls) of ready rolled shortcrust pastry.
Utensils:
  • Small frying pan
  • Chopping board
  • Mini muffin tray (twelve wells)
  • Table spoons
  • Pastry cutters or glass
  1. Heat the oven to 180C, 350F or gas mark 4.
  2. Fry the onions with the other filling of your choice on a low heat until soft and cooked through. (be very careful)
  3. Allow to cool a little, then mix with the cream, eggs, cheese and seasoning.
  4. Lay out pastry then cut 12 circles out.
  5. Grease the muffin tray with butter then press the pastry into the wells.
  6. Place two spoonfuls of the mixture into each pastry.
  7. Bake for 10-12 minutes until golden and set.
  8. Leave to cool then enjoy.
